Then we met Mr. Yutaka Shinozaki, the owner and a master roaster. He studied and got his certificate from the Specialty Coffee Association.

Coffee Preparation

Mr. Yutaka Shinozaki showed us how he prepared his beans. (We’ll show it in our vlog to be uploaded in our youtube account.) In the picture below, he is roasting coffee, then carefully taking notes of the temperature. We can’t take a shot of the temperature because it is a trade secret 😉

After the coffee was roasted, the beans were grinded and placed into this dripping apparatus. This is the best way to get the flavor from the coffee beans.

Different Coffee

We tasted various coffee from different coffee beans. First we had Yirgacheffe from Ethiopia. This one has a flowery and nutty feel into it.

Then, we had Fazenda from Brazil. This one has a nutty taste.

Finally we had an Espresso shot, one shot is from the commercially produced beans and another is from their shop. I immediately tasted the difference, the specialty coffee is more delicious!

At first I had the impression that coffee is the same. But Himawari Specialty Coffee taught me that the taste is different from each beans.

Commercially used beans are bitter because they roast it in large batches, so there is a great chance that there will be burnt beans. But, specialty coffee doesn’t have the bitter taste.

After tasting all of the coffee that was served to us, I really tasted the difference of each beans.

Aside from coffee, the shop also sells Japanese sweets and pastries. We suggest that you buy pastries and coffee together so you can save a few bucks. These pastries are from Himawari’s partner store, the Edoan.

We started with the Lychee Fruit Jelly. This consists of Pineapples at the bottom, and Lychee on the top under the clear gelatin. This tasted as good as it looks.

Then, we tasted the Custard Pudding. This one reminds me of the classic Leche flan, but not as sweet as Leche Flan.

Finally, we had the Peach Fruit Jelly. This has bits of fruits in the bottom, peach on the top, and then covered with clear gelatin.

It’s time for pastries! First is this Cream Puff. It tastes good, just like the classic cream puff.

This Match Eclair tastes nothing like the matcha here in the Philippines. It tastes good but it is not super sweet.

Overall, we love the experience that Himawari specialty coffee gave us. They taught us how does specialty coffee was made, and we got a chance to distinguish the different taste of each coffee.

Coffee is great! and the pastries are a plus too!

The coffee shop is just along the national road.

Ambiance

Even though the cafe is small, it has a nice ambiance.

Specialty Coffee usually costs Php 500-700 per cup, but they just offered their coffee for just Php 200
